How is it Cheesy?
Don’t let that color fool you: there is no nutritional yeast in this recipe! Normally when I create a “cheese” substitute, I use nutritional yeast which is found in soil and has an umami flavor and cheese-like taste so naturally, it is widely used in vegan cooking. However I was fresh out, and with seven, hungry children ready for their dinners, I had to think fast!
Is Chickpea Sauce even a thing?
It is now, haha! This recipe as I mentioned, happened out of pure necessity and the saying goes: “necessity is the mother of invention”. That was certainly the case for me! While I did enjoy this accidental creation, my all-time GO TO recipe for pasta is my Creamy Cashew Alfredo Sauce. I am so thankful my husband keeps a stockpile of chickpeas! I am not sure what I would have done without them! It was a challenge, but I was very much surprised by how tasty it turned out! When you fail at cooking often enough, you start to remember your mistakes and get good!
Is it kid tested?
The kids loved it and we also had friends over that I made my guinea pigs and they loved it too; they licked the bowl clean! My husband was not as big of a fan but he still said it was good. You will also love as they did, the creaminess it acquired through the old-fashioned oats! If you have oat flour that would work too.
Nut Free Creamy Cheesy Chickpea Sauce
Equipment
- Blender
Ingredients
- 1 can (15.5oz) chickpeas drained
- 3 cloves of garlic crushed
- 1 cup water
- 1/2 cup old fashioned oats
- 1/2 tsp smoked paprika
- 1 tsp salt and to taste
- 1/2 tsp black pepper and to taste
- 1 tbsp Italian Seasoning
Instructions
- Add all ingrediants to blender and blend on high until smooth.
