- 2 cups precooked quinoa
- 1 15.5oz canned chickpeas (drained) I only added one cup of the chickpeas but feel free to add more if you like or save the rest as a snack
- 1 red bell pepper diced
- 1 cup fresh spinach
- 1 cup shredded cabbage
- Tahini Dressing as desired
Tahini Salad Dressing
- 1/4 cup oil free tahini
- 1/2 cup water
- 1/2 tsp agave nectar
- 1/2 tsp apple cider vinegar
- the juice of one lime
Spices for tahini salad dressing
- 1 tsp salt
- 1/4 tsp dill
- 1/4 tsp ground black pepper
- 1/2 tsp garlic powder
- 1/2 tsp oregano
Instructions
Tahini Salad Dressing
- Combine all the ingredients in a measuring cup and mix with a fork until smooth. Makes 1/2 cup of dressing.
- Strain the chickpeas and add all remaining ingredients to a salad bowl. Toss to mix and serve with tahini dressing as desired. This salad will keep well covered in the fridge for up to 4 days.
