Alfredo sauce is traditionally made using parmesan cheese, heavy cream, and butter while a vegan cashew alfredo sauce uses cashews for the fat and creamy content. Although I chose to follow a plant-based lifestyle (to read why I made the change, click here), I still craved that creamy alfredo sauce but I wanted it without the bloating and fat from the traditional sauce. That’s how this recipe was born!
What’s in cashew alfredo sauce?
For my cashew alfredo sauce, I use just 5 ingredients plus spices and they are:
- Raw unsalted cashews
- Old Fashioned Oats (If you’re gluten-free, make sure you get a brand that is certified gluten-free like this one from Bob’s Red Mill)
- Lemon Juice (I’ve used apple cider vinegar too with just as tasty results)
- Water
- Garlic cloves
For spices, I use salt, garlic powder, Italian seasoning, black pepper, and onion powder to taste. You can always add more spices so start with just a little bit. Every time I make this recipe, I end up wishing I had made more so the recipe you’ll see below is the big batch!
How do you make it?
All you need for equipment is a high-powered blender like this one. Soak the cashews in warm water for 15 minutes to soften them. Peel your garlic cloves. Add all ingredients to the blender and blend on high for 40 seconds or until smooth. If you want the sauce to go further, simply add more water a tablespoon at a time.
