If you’re adjusting to a plant-based diet and also miss your meat and dairy, this hotdish is for you! All you need are 5 ingredients, a pot, and equally important, an appetite! This is also a great meal to serve for those vegan skeptics in your life who need some convincing! I made this all in my instant pot but if you don’t have one, no problem! You can make it just as well, and for the same time on the stovetop. Let’s get right into it!
“What do I need for this hotdish?”
- Gluten-Free Noodles: These are my favorite brand! They don’t break apart and have just 2 ingredients!
- Beyond Meatballs: I couldn’t find the already ground sausage so I just broke up the meatballs
- Full-fat coconut milk: I use coconut milk for all of my creamy dishes; like my One Pot Pasta!
- Daiya Mexican 4 Cheeze Style Blend Shreds: Every now and then it’s fun to have that cheese-like taste again! If you want to take a little extra time, you gotta try this homemade cheese recipe from It Doesn’t Taste Like Chicken!
- Green Beans: You can use any veggie of your choice. Another idea would be to throw in a bag of mixed frozen veggies for convenience’s sake.
- Spices: I used salt, pepper, garlic powder, onion powder, rosemary, and smoked paprika.
Steps for making this hotdish: Instant Pot
1: Select the SAUTE setting. Add the sausage meatballs and break them up with a spatula. 2: Brown the meatballs for 3-5 minutes until heated through. Remove from pot and set aside. 3: Select the Saute option once again. Fill the pot with 4.5 quarts of water. Select the SAUTE setting again and set the timer for 10min. Place the cover on but don’t latch it to help speed up the water heating. 4: Once the water is boiling, add the full package of noodles and your veggies. Stir well to combine and cook for 10 minutes or until the pasta is al’dente. 5: Last of all, strain and return to the pot along with the rest of the ingredients. Enjoy!
Steps for making this hotdish: Stovetop
1: Heat a large nonstick skillet and add the meatballs. Break up with a spatula. Cook for 3-5 minutes until heated through. Set aside. 2: Fill a large pot with 4.5 quarts of water and bring it to a boil. 3: Add the full package of noodles and then your veggies. Stir well to combine and cook for 6-8 minutes or until the pasta is al’dente. 4: Strain and return the pasta and veggies to the pot along with the meat. 5: Add in the coconut milk, cheese, and spices. It’s that easy! Dinner in about 20 minutes!

- 1 Nonstick skillet

Ingredients
- 1 16oz package of brown rice pasta or your favorite gluten-free pasta
- 1 10oz package of Beyond Meat Meatballs (12 meatballs)
- 4 cups frozen snapped green beans or frozen veggie medley of choice
- 1 7.1oz package of Daiya Mexican 4 Cheeze Style Blend Shreds or shredded vegan cheese of your choice
- 1 13.5oz can of full-fat coconut milk
- 4.5 quarts water
Spices
- 1 tsp salt
- 1 tsp ground black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp rosemary
Instructions
- Select the SAUTE setting. Add the sausage meatballs and break them up with a spatula.
