Work smarter, not harder they say, so when you have 3 kids under the age of 6, you need quick, easy, and healthy meals which is why I love these mixes from Aldi! Broccoli and cheese are delicious in the microwave!
You can make this on the stovetop too but when I was throwing this meal together, I needed it fast so the microwave came to my rescue! You cook the blend first and then let it cool. Meanwhile, steam the broccoli. Mix it all together and add the vegan cheese on top to melt. Tada!
Vegan Cheese
I was thrilled with how delicious the mozzarella vegan cheese slices tasted in this dish! When melted, the texture is very gooey, not stringy like traditional mozzarella cheese. The flavor was spot on! You could try it with a vegan cheddar cheese alternative as well, though I personally have not tried that yet.

Easy Broccoli and Cheese Quinoa Bowl-Vegan
Equipment
- Microwave Or stovetop is fine too
- 2 Microwave-safe bowls
- Spoon
- Knife
Ingredients
- 1 4.9oz Box of Earthly Grains Quinoa Blend
- 1 head of fresh broccoli cut
- 2 slices Earth Grown Vegan Mozzarella Style Slices
- 1 3/4 cup water plus 3 tabelspoons to steam the broccoli seperate
Instructions
- Pour the contents of the blend, the seasoning packet, and the water into a microwave-safe bowl. Cover and cook on high for 6 minutes.
- Take it out carefully and stir. Replace the cover and microwave for an additional 6 minutes. Remove and stir until the water is all absorbed (depending on your microwave, you may need to cook for an additional minute)
- Set the quinoa/brown rice blend aside to cool. Cut up the broccoli and place in a microwave-safe bowl along with 3 tabelspoons of water.
- Cover and cook on high for 4 minutes. Carefully remove from microwave and add to the quinoa/rice blend. Stir well
- Top the rice and broccoli with 2 slices of vegan cheese. Microwave for 30 seconds to melt the cheese. Stir well to combine. Enjoy!
