How did you create this banana nut bread?
Well first off, I cannot take all the credit for this miracle bread! Faith from Faithful Plateful (Check her out, she has AMAZING plant-based content!) made a recipe for muffins and they are INCREDIBLE! (Click here for that recipe!) so all I did was make it gluten-free, added some flaxseed and walnuts, and turn it into bread. The rest was all Faith (Thank you girl for your amazing work! Keep it up!) Finally, I will tell you how to make it!

How Do You Make It?
Step 1: Mix all of your dry ingredients together. Set aside.
Step 2: Mix all of your wet ingredients together. Stir the wet and dry ingredients together and mix well.
Step 3: Pour half the batter into the bread tin and place in air fryer at 350 for 30 minutes or until a toothpick comes out clean. That’s it! (My regular bread tin was too big in the air fryer so I had to use a smaller tin)
Extra Step: If you want to make muffins instead of bread, then this recipe will yield 24 muffins. The change in baking would be to use an oven at 325 for 30 minutes and insert a toothpick to determine doneness. If it’s clean, they’re done!

Best EVER Blueberry Banana Nut Bread-Vegan and Gluten Free
Equipment
- 1 Blender
- 1 Mixing bowl
- 1 Whisk
- 1 Measuring cup
- 1 Measuring spoon
- 1 air fryer or oven
- 1 Spatula
- 1 Bread Tin
- 2 12 muffin molds
Ingredients
Wet Ingredients
- 6 ripe bananas
- 1/2 cup pure maple syrup
- 1/2 cup almond milk
- 4 tsp vanilla extract
Dry Ingredients
- 4 cups oat flour (I just blend up old fashioned oats)
- 1 tsp baking soda
- 2 tsp milled flaxseed
- 4 tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 1 cup chopped walnuts
- 1 cup frozen blueberries
Instructions
Wet Ingredients
- Peel and mash your bananas with a fork.
- Add to the bowl the remaining wet ingredients
- Stir well to combine. Set aside.
Dry Ingredients
- Combine the dry ingredients and mix well.
- Mix the wet and dry ingredients together and stir until well combined. Add in the berries and walnuts and mix well.
- Using a spatula, cut the dough in half and pour half the mixture into a greased 4 1/2 by 8 1/2 loaf tin. Place in the air fryer at 350 for 30 minutes on the air fryer setting.
- Bake for 30 minutes or until a toothpick comes out clean. Allow to cool for 30 minutes before slicing (I know, it's hard but the bread will have better form if you wait)
- Serve with oil and sugar-free peanut butter and vegan Nutella and a side of fresh fruit! Enjoy as breakfast, dessert, or snack or all 3!
For Muffins
- You will need 24 muffin molds. Bake in the oven at 325 degrees farenhiet for 30 minutes or until a toothpick comes out clean.
I haven’t made this yet but it does look delicious so will be making it soon. Just one thing, you mention flaxseed in your information about this bread but they are not listed in your ingredients. I assume they are added with all the dry ingredients? Thanks again for posting this recipe.
