More and more people these days, especially children, are discovering they have an intolerance to dairy. To a kid who only wants to eat Mac n’ Cheese, this is a devastating diagnosis! But now there is hope with my kid tested, mother approved vegan cheese sauce! My kids demanded seconds and THIRDS so you know it’s good!
Does Your Vegan Cheese Contain Any Nuts?
Not technically. I use cashews which are actually called a drupe. Check out this article to learn more! To that end, here are the rest of the ingredients:
- Butternut Squash
- Cashews
- Nutritional Yeast
- Garlic (Raw garlic and onion! The kids had no idea. Shh!)
- Onion
- Plant-based milk
- Apple Cider Vinegar
- Water

What Inspired This Vegan Cheese Sauce?
Maybe you’re like me and wait until your pantry is nearly empty to feel creative and want to make something new! My daughter asked for cheesy noodles for lunch and I wanted to eat up some thawed butternut squash so instead of making my delicious go-to Vegan Cashew Alfredo Sauce I decided to get creative and make a new cheese sauce! My kids love to help me make new creations and add their own take on spices. I love it!

How Do I Make It?
All you need to do is soak your cashews in hot water for at least 20 minutes, add everything to the blender and blend on high till smooth! For seasonings get creative and make it more or less spicey. We used:
- Salt
- Ground black pepper
- Smoked paprika
- Taco seasoning
- Rosemary

Kid Tested, Mother Approved Cheese Sauce-Vegan Cheese Alternative
Equipment
- 1 Blender
Ingredients
- 2 cups canned butternut squash
- 2 tsp apple cider vinegar
- 1/2 cup soaked cashews Soak the cashews in hot water for 20 minutes to soften them.
- 1/2 cup nutritional yeast
- 1/2 cup almond milk
- 1/2 cup warm water
- 1 tsp salt
- 1 tsp ground black pepper
- 1 whole garlic clove
- 1/2 onion chopped
- 1 tsp smoked paprika
- 1.5 tsp taco seasoning
- A pinch of rosemary
Instructions
- Soak your cashews in hot water for 20 minutes to let them soften. You can omit this step if you have a powerful enough blender.
- Add all the ingredients to the blender and blend on high for one minute or until smooth.
- Serve over noodles, as a veggie dip, salad dressing, hot dish or on burgers. Enjoy!
