Traditional Easter dinner boasts carrots, potatoes, and asparagus amongst others so I made sure to include those and added a side dish of quinoa. This seed acts like a grain and is ready in just 15 minutes on the stove!

How Do You Make the Tahini Sauce?
Last, but not least, the tahini sauce I’ve had so many people asking me for! Simply add all your ingredients to a jar, mix well with a fork and you’re all set! It contains:

Easy Air Fryer Easter Dinner-Vegan and Gluten-Free
Equipment
- 1 Oven, Convection Oven or Air Fryer
- 1 Cutting Board

- 1 Cookie Sheet (If using oven)
- 1 Aluminum Foil
- 1 Ziplock Bag
- 1 Measuring cup
- 1 Fork
Ingredients
Vegetables
- 3 medium russet potatoes sliced thin
- 6.3 oz fresh asparagus with the ends trimmed
- 3 carrots sliced thin
Spices
- 1 tsp salt
- 1/2 tsp black pepper ground
- 1 tsp garlic powder
- 1 tsp oregano
Tahini Sauce
- 4 tbsp oil free tahini
- 2 tbsp balsalmic vinegar
- 6 tbsp water
- 1 tbsp maple syrup
- 1 tbsp yellow mustard
Quinoa
- 2 cups dry quinoa
- 4 cups water
- 2 bay leaves
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
Instructions
Vegetables
- Wash and cut up your veggies
- Toss the veggies and spices in a Ziplock bag and toss well to coat
- Line a cookie sheet with tin foil or parchment paper and arrange the veggies however you'd like. Place in the air fryer on the convection setting, 350 for 30 minutes.
Quinoa
- Rinse the quinoa under cold water for about 3 minutes. This will remove the bitter taste.
- Bring the water, spices, and quinoa to a boil. Cover and reduce heat to low. Cook for 15 minutes or until all the water is absorbed. Remove from heat. Garnish with fresh green onion slices.
Tahini Sauce
- Combine all ingredients and stir well with a fork to combine. Makes 3/4 cup.
Bring It All Together
- Serve a helping of the quinoa alongside the veggies and drizzle the sauce over top. Garnish with fresh green onions slices. Enjoy 🙂
